जी हाँ !...
यही नाम है इस हरियाणवी खाजे (पकवान) का ....
हम क्यों भूलते जा रहे हैं अपने रीती रिवाज...
क्या हम इन से नहीं हैं?
मैने मम्मी के साथ कल कसार बनाया ...इसे थोड़ा सा घी डाल कर खाया...बहुत स्वादिस्ट लगा!
मुझे याद है मेरी दादी ढेरों कसार बनाकर रखती थी ...हम ज़ब भी भूख लगती इसे घी डाल कर खाते थे ।
गेहूँ के आटे से गुड के साथ हलकी चूल्हे की आंच पर लोहे ki कढाई में बना यह खाजा ...पौष्टिकता से भरपूर है.


बोतल में डाल कर रखा कसार कटोरी में डाल खाने के लिए तैयार है.

मम्मी के बनाये पुराने कपडे से चोटी गूँथ कर बनाया यह कोस्टर , जिस पर कसार की कटोरी रखी है ..
क्या खुबसूरत लग रहा है.

कोस्टर और कसार को निहारना मुझे बहुत भला लग रहा है....

हर बेकार चीज को उपयोगी बनाना मैने बचपन से ही अपने पिताजी से लिया था ....

ग्रीन लिविंग और टिकाऊ जिन्दगी हमारा व्यवहार रहा है...

Teej preparations

Khub ghever Khao

Ingredients of this recipe:

3 cups Plain फ्लौर

1 cup घी

3-4 ice cubes

4 cups वाटर

1/2 cup मिल्क

1/4 tsp Yellow कलर

1 kg घी

Syrup:

1 1/2 cups Sugar

1 cup Water

Topping:

1 tsp Cardamom पावडर

1 tbsp Almonds chopped

1 tbsp Pistachios

1 tbsp Milk

1/2 tsp Saffron dissolved in milk

Silver फोइल

Method to make this recipe :
Prepare sugar syrup of 1 thread consistency and keep aside.
· In a large bowl put ghee.
· Add milk, flour and 1 cup water. Mix together to make a smooth batter.
· Dissolve colour in some water and add to batter. Add more water as required.
· Batter should be of running consistency.
· Take an aluminium or steel cylindrical container.
· The height should be at least 12". And diameter 5-6".
· Fill half with ghee. Heat.
· When ghee is hot, take a 50 ml, glassful of batter.
· Pour in centre of ghee, slowly in one continuous threadlike stream.
· Allow foam to settle. Pour one more glassful in hole formed in centre.
· When foam settles again, loosen ghevar with an iron skewer inserted in hole.
· Place on a mesh to drain excessive oil.
· Keep sugar syrup in a wide flat bottomed container to fit in ghevar.
· Dip ghevar in it, and remove, keep aside on mesh to drain excess syrup .
· Cool a little, top with silver foil.
· Splash a few drops of saffron milk, sprinkle some chopped dryfruit and a few pinches of cardamom powder.
· Ghevar is ready to be served.

I Dropped the Idea....

I love all Reader's Digest .........as for as sewing i refer so many books ...list is really huge....

i was intended to have one reader's digest for sewing but....

I go throw the book several times in our library, but on observing the pages of the latest 2002 edition the impressive volume of instructions and references that appeared the earlier versions were totally absent. I was very disappointed in the 2002 edition. There are 384 pages in the 2002 edition and 500 pages in the older edition. In another library of the Hisar. city I obsered even 500+ pages and better edtions then the edition in our library., They include everything you'd want to know about sewing. Unfortunately each newer edition is becoming smaller with less reference material. The section on sewing for the home such as draperies, shades, bedcovers has been replaced by a project on how to sew one type of curtain. The section on sewing for Men and Children is replaced by instructions on how to sew a shirt for a boy, and one skirt for a girl. They give details on doing different patterns instead of a reference section for Men and Children's clothing, sewing techniques. The same applied for sewing for the home. In a book, I expect references that the pattern cannot detail on many different parts and types of clothing. I expected the 2002 edition to be larger with even more reference on style alterations and sewing methods for different materials, garments, and interior home decor. In this century there is more variety of materials available and styles that a sewer needs to make reference to. I previously decided to have my own edition this time. But now, I am debating whether I should drop the idea for the latest edition or have it, since my expectations were much more than what the book provided.

जुलाई,१९६७
मेरे पिताजी उन दिनों जोरहट, आसाम में पोस्टड थे और हम सब बहन, अपने भाई अपनी मम्मी के साथ, दादा-दादी के पास गाँव आगये थे में अपने गाँव में सुबह ३.३०-४.०० लेट्रिन करने कुर्डी, जो कि गाँव के बाहर थी जाया करती थी, गाँव में लाइट नहीं थी, पर में बहुत निडर थी अकेली ही चली जाती थी. उस दिन कुछ एसा हुआ कि जैसे ही में कुर्डी के नजदीक पहुंची हमारे गाँव की एक औरत ( दिलीप की बहु जो रिश्ते में मेरी दादी लगती थी मानसिक रोगी थी), मेरी ऑर लपकने लगी में उससे डर कर रास्ते में किसी के घर की ओर, जहाँ से दिए कि रौशनी आ रही थी, की तरफ बढने लगी उनकी चौखट पर चढ़ गई तब वह( दिलीप की बहु) भी समझ गई कि वह घर का दरवाजा खटका देगी और वह हंस पड़ी बोली " बेटी डरगी के... जंगल होंन आई सै..हाँ बेटी बहोत बख्त उठे सै...बख्त उठ कीं पढ्या करे के बेटी" में दबी जबान से बोली " हाँ दादी" और झटपट कुर्डी पर निपट कर घर चली गई. घर जाकर मैने अपनी दादी से सारी बात बताई, उस दिन के बाद काफी दिनों तक सुबह मेरी दादी मेरे कुर्डी पर जंगल होने साथ जाने लगी थी.

अप्रेल ३ उस दिन खेत में सूड़ ( झाड़ इत्यादि) काटने नोइवाले खेत में गये। खेत में इतने झाड़ झंखाड़ थे कि घुसना मुश्किल था, पर खेत साफ करना जरूरी था सिर पर मंदासा बांधा और सूड़ काटने जुट गई झाड़ों को कसोले से काटते हुए जेली से इक्कट्ठा करती गई, थोड़ी देर में मेर दादा वहाँ आ गये देख कर बड़े खुश हुए कहा कि मेरी बेटी ने यक जवान की तरह काम किया है। जिसकी काम करने की नियत हो वह क्या नहीं कर सकता.

Hot chocolate is one of those things that spoil you forever. Once you make it at home you just can't go back to those ready-go packets of hot cocoa anymore. Real homemade hot chocolate is thick, rich, and the real essence of what chocolate in a glass on a cold day should be.How is hot chocolate different from hot cocoa? Hot chocolate is basically like drinking a melted candy bar; the chopped chocolate contains cocoa butter which makes it richer and smoother. Cocoa is powdered and contains no cocoa butter and thus very little fat. It also contains dried milk, sugar, and added flavors.
This is the real stuff, and once you try it you may never want drink hot cocoa again! The recipe here serves four, it may not look like a lot but believe me it's very rich and one cup is more than enough for a single person.
Chocolate to Use
If you plan to make good hot chocolate, it helps to start with quality chocolate. Scharffen Berger, Guittard, and Valrhona are great choices if you can find them where you are.
I suggest using bittersweet or semisweet chocolate. Bittersweet has little sugar added to it so you'll get a more pure chocolate taste. Semisweet works too, and usually has more sugar added to it than bittersweet. What about those cacao percentages? The higher the cacao percentage (noted on the chocolate package) the more chocolate solids are in the product, and therefore the higher intensity of chocolate flavor. Semisweet is usually 35-40% cacao, bittersweet up to (and sometimes higher than) 75%. 100% cacao is unsweetened chocolate, which is fine for baking, but you probably don't want to use it for hot chocolate. Milk chocolate already has milk solids added to it and has a very low (about 20%) cacao percentage.
Milk, Soy, or Water?
Whole milk lends to the creaminess and sweetness of hot chocolate, but feel free to use lowfat or nonfat milk if you prefer. For a thicker, richer hot chocolate, switch out 1/4 cup of milk for cream.
Soy milk is an alternative if you are lactose intolerant. Use unflavored or vanilla soy milk.
Believe it or not, you can use water instead of milk (though most people use milk). Water allows the chocolate to show off its true flavors and unique characteristics, however you lose the creamy feel and taste when you don't use milk.
Spices & Herbs
Experiment with spices and herbs to create unique flavors with your hot chocolate. Centuries ago the Aztecs made hot chocolate with vanilla and chili peppers. Today Mexicans enjoy hot chocolate with cinnamon. Many flavors can be added to chocolate, such as the classic flavors of peppermint and orange. You might also try lavender, bay leaf, or star anise.
Brew spices into the milk (or soy milk or water) during the initial heating process. After the milk is steamy, strain out the spices and herbs and return the hot, flavored milk back to the pan and add the chocolate as you normally would.
Liquors
A small addition of liquor is a fun way to warm the body on a cold night. About 1 to 1 1/2 ounces of liquor is the right amount per cup of liquid being used. Most any favorite liquor will work. Dark chocolate with a dark Guinness is a perfect combo. Cinnamon or peppermint schnapps with hot chocolate are classic companions. Kahlua and chocolate makes for a sort of mocha-esque treat that you won't find at your local coffee shop. A popular way to drink hot chocolate in Canada, according to some of my northern relatives, is to add a bit of whisky and (real) maple syrup.
Whipped Cream
Regardless how you make it, I think whipped cream makes hot chocolate (or anything really) better. Feel free to use an extract such as vanilla or anise to flavor the whipped cream. Once dolloped onto your drink a small sprinkling of nuts, cocoa powder, or ground spices is a great way to add flavor and pump up the presentation.
My best advice to creating your perfectly flavored hot chocolate is to make it as you like it. Feel free to experiment as I doubt friends and family will mind being subjected to cup after cup of chocolate.

वन पिस स्वेटर

सामग्री: 400 ग्राम ग्रे रंग ki ऊन, ४ व् ६ न की सलाइयाँ , केबले सलाई, दोसूती सुई.
ध्यान दें: एस स्वेटर का अगला पिछला हिस्सा इकट्ठा बनाया गया है. गले तथा मुद्दे की पट्टियाँ साथ-साथ ही निकाली गई हैं.
विधि: ६ न की सलाई में ८८ फं डाल कर १ फं उ, १ फं सी की बुनाई में ८ से मी लम्बा बार्डर बुन जाने के बाद सीधी सलाई बदल कर नमूना डालें. नमूने की पैनल १८ फं की है.जिसमें साइडों की धारियां २-२फ़ं की केबल हैं. बीच की जंजिरा केबल ८ फं की है. अगले हिस्से में १६-१६ फं साइडों में तथा २० फं बीच में रखे गए हैं १८-१८ फं की पैनल है.
पैनल का नमूना: साइडों की केबल के लिए १ फं केबल सलाई पार उतार कर अगला पहले बुने. फिर केबल सलाई वाला फं बुनें .*बीच में ४ फं वाली केबल, २फ़ं केबल सलाई पर उतार कर आगे कर के अगले २फ़ं पहले बुन कर केबल सलाई वाले फं बाद में बुनते हुए बनाएं. ऐसे तीन मोड़ देंने के बाद बीच की ज़ंजीर के लिए २ फं केबल सलाई पर उतार कर पीछे कर के रक्खें अगले २ फं बुन कर केबल वाले फं बुनें फिर २ फं उतार कर आगे करें तथा अगले २ फं पहले बुन कर बाद में केबल सलाई के फं बुनें अगली सीधी सलाई में पुरे फं सीधे बुनें इससे अगली सलाई में जंजीरें के ८ फं में से पहले २ फं को केबल सलाई पार उतार कर आगे करें अगले २ फं बुनें फिर केबल सलाई के फं बुनें. अगले २ फं को उतार पीछे करें फिर २ फं बुन कर केबल सलाई वाले फं बुन लें.* आगे इसी तरह चिन्ह* से * तक दोहराएँ. (उ सलाई में केबल वाले फं उ तथा बाकि पैनल के सभी फं सीधे बुनाई में बुने जायेंगे सीधी तरफ पूरी पैनल के फं सीधे ही बुने जायेंगे) मुद्दे तक पूरी लम्बाई होने पर ४८फ़ं ( आधे से ४ फं ज्यादा ) पर एक तरफ का मुद्दा तथा गला घटाएं.
५ फं मुद्दे के घटा कर बाकी ४३ फं पैनल डालते हुए बुनें. उ सलाई में ४ फं सी गले की पट्टी के लिए बुनें बाकी फं पहले की तरह बुनें तथा अंत में मुद्दे की पट्टी के लिए ४ फं सी बुनें अगली सी सलाई में ५ फं सीधे बुन कर २ फं का १ फं बना ले गले की पट्टी से पहले भी २ फं का 1 फ़ं कर लें. अब मुद्दे के बाकि फं पट्टी के ५ फं छोड़ कर २ फं का १ फं बनाते हुए हर सीधी सलाई में घटा लें. इसी प्रकार गले की घटाई भी हर तीसरी स में १-१ फं घटाते हुए कर लें. ध्यान रखें दोनों तरफ पट्टियों के ५-५ फं , जिनमें किनारों के ४-४ फं दोनों तरफ सीधे बुने जायेंगे तथा १-१ फं सी सलाई में सी तथा उ सलाई में उ बुना जायेगा. पूरी लम्बाई कर के फं दूसरी सलाई पर उतार कर रख दें दूसरी तरफ से ४४फ़ं उठायें तथा ४ फं गले की पट्टी के ऊपर से उठा लें. उसी तरह गला मुद्दा घटा कर पूरी लम्बाई कर के दूसरी तरफ के फं भी सलाई में डाल लें. अब गले तथा मुद्दे की पट्टी उसी तरह बनाएँ, पैनल न बनाएँ एक तरफ के फं बुन कर २० फं उसी सलाई में और डाल लें फिर दूसरी तरफ के मुद्दे के फं भी बुन लें. २० फं की पिछले गले की पट्टी को अगले गले की पट्टी के ४-४ फं मिला कर दोनों तरफ के मुद्दे के फं भी बुन लें. २० फं की पिछले गले की पट्टी को अगले गले की पट्टी के ४-४ फं मिला क्र दोनोएँ तरफ सीधी बुनाई बनाते हुए उसी चौड़ाई में बनालें. पिछले हिस्से की मुद्दे की पट्टियाँ बनाते रहें. फिर मुद्दे घटाने तक बनाने के बाद उसी प्रकार फं दोनों तरफ बढ़ा लें. आगे के हिस्से जितना लम्बा होने पर बार्डर बना कर साइडों सी दें लीजिये स्वेटर तैयार है.

सुंदर कम्बल बनाएं

क्रोशिये से कम्बल बनाएं
देखिये चित्र में प्रैम पर डाला हुआ कम्बल, यह देखने में सुंदर तथा भुत ही आरामदेह है. इसे निचे बताये त्रिकेनुसार आप भी बना सकती हैं.
आवश्यक सामग्री: ३३ ग्राम लाल एवं ३०० ग्राम लैमन रंग की ऊन, १३ नम्बर का क्रोशिया.
नाप: १०० सेंमी x ८० सेंमी (४० इंच x ३२ इंच).
संकेत चिन्ह: चेन ,चेनें, स्टि- स्टिच, ट्रे- ट्रेब्ल, ड ट्रे- डब्बल ट्रेब्ल, हा ट्रे - हाफ ट्रेब्ल, सिं क्रो - सिंगल क्रोशिया, स्लि स्टि- स्लिप स्टिच, ला - लाल रंग की ऊन, लै - लैमन रंग की ऊन.
विधि: हुक से दूसरी चे में १ सिं क्रो* अ चे में हा ट्रे अगली २ चे मेन१-२ ट्रे, उससे अगली चे में १ ड ट्रे फिर २ चे में १-१ ट्रे, उससे अगली चे में १ हा ट्रे तथा फिर १ सिं क्रो बनाएं * अब* चिन्ह* से अंत तक दोहराएँ, २ चे बनाकर मोडें.
दूसरी पंक्ति: पहली स्टि से अंत तक १-१ सिं क्रो की २ लूप में से ला जोड़ कर खिंच लें ४ चे बनाएं और मोडें.
दोनों पंक्तियों में नमूना पूरी लम्बाई होने तक दोहरायें. पूरे कम्बल पर ३५ लै तथा ३४ ला धारियां बनेंगी.
बार्डर: कम्बल के चारों किनारों पर लै से एक चक्कर सिं क्रो तथा दूसरा चक्कर ट्रे से बनाएं. कंगूरे ला जोड़कर बनाएं. ला से * ९ सिं क्रो १-१ ट्रे पर बनाएं ४ चे बनाकर मोडें २ सिं क्रो छोड़ कर तीसरे पर सिं क्रो बनाएं, ४ चे बनाएं फिर अगले सिं क्रो पर १ सिं क्रो बनाएं. ४ चे २ सिं क्रो छोड़ कर अगले पर सिं क्रो बनाएं मोड़ कर पहली लूप में १ सिं क्रो १ ट्रे बनाएं दूसरी लूप में १ ट्रे २ चे १ ट्रे बनाएं. तीसरी लूप में १ ट्रे सिं क्रो बनाएं * चिन्ह* से * तक बार्डर का पूरा चक्कर बनाएं.
मेक अप : कम्बल को उलटी तरफ से हल्की- हल्की इस्त्री कर लें.

सुंदर पर्स बनाएं

मैक्रेम तार का सुंदर पर्स
सामग्री: दो अलग-अलग रंग के मैक्रेम तार के गोले, क्रोशिया-१३ नम्बर का, जिप, दोसूती सूई.
संकेत चिन्ह: चे- चेन ,चेनें, स्लि स्टि- स्लिप स्टिच,, ट्रे- ट्रेब्ल, ड क्रो- डब्बल क्रोशिया.
विधि: किसी भी रंग की तार लेकर क्रोशिये से ११ चे बनाएं, हुक से तीसरी चे में एक ड क्रो बनाएं. इस प्प्रकर हर चे में १-१ ड क्रो बनाएं कुल १० ड क्रो बना कर 1 चे बनाकर मोडें. पहले ड क्रो की चे छोड़ कर हर अगली चे में १-१ ड क्रो बनाएं. इस प्रकार १०-१० ड क्रो की कुल २२ लाइनें बनाएं. यह पर्स का आधार बन गया. अब चित्र में देख कर आधार के चारों और गोलाई से कुल ४५-५० ड क्रो बनाएं. अब पर्स एक ही तरफ से बनेगी. हर लाइन स्लि स्टि से बंद कर के उस पर अगली लाइन शुरू होगी. इसके बाद इस प्रकार बुनें.
पहली लाइन इस प्रकार बुनें: पहली
लाइन उसी रंग से तीन चे बनाएं ड क्रो में १ ट्रे 2 चे तथा २ ट्रे का क्लस्टर बनाएं, फिर १ चे बनाएं 3 ड क्रो को छोड़ कर 2 ट्रे 2 चे तथा २ ट्रे का क्लस्टर बनाएं पूरी लाइन इस प्रकार बना कर लाइन बंद कर दें.
दूसरी लाइन इस प्रकार बुनें: दूसरे रंग
से ३ चे बनाएं आधार वाली ड क्रो की तीन छोड़ी हुई चे की बीच की चे में 2 ट्रे 2 चे तथा २ ट्रे का क्लस्टर बना कर अगली बीच की चे में भी एक क्लस्टर बनाएँ. स्लि स्टि से बंद कर दें.
तीसरी लाइन इस प्रकार: उसी रंग से दूसरी की तरह सभी लाइनें ऐसे ही
बनेगी कुल ९ लेने बनालें. ऊपर हर चे पर १-१ ड क्रो बनाएँ इस प्रकार दो लाइनों का बार्डर बना कर बंद करे, तार में से दो धागे निकाल कर सूई से जिप लगादें.
नोट: यह पर्स आप धागे अथवा ऊन से भी बना सकती हैं. इसके बीच में टैटरोन की लाइनिंग देने से कदा हो जायेगा चित्र १ की स्शायता से यह आसानी से बनाया जा सकता है. चित्र २ में तैयार पर्स दिखाया गया है.
